Holiday Greetings From HRG!
Greetings all,

Wait - we just checked our calendars, and noticed that 2018 is about to come to a close. How did that happen (again)? It has been a truly great year for all of us at Hospitality Resource Group, as we enjoyed working with our strategic partners to expand our business in event management, customized training, and marketing.
 
But beyond our base of business, we enjoyed cultivating a broader and deeper relationship with our clients as true partners in our success, highlighted by our work with the Jobs Waiting program, as we helped over 100 long-term unemployed residents here in Westchester and the Hudson Valley return to work this year. 
 
We would like to take this opportunity to give thanks to all of the employers in our area that we worked with who took time out from their busy schedules to share their tips and techniques on how to develop a successful job search, and their support in hiring people who have regained their confidence, and will be joining their friends and families for a most special holiday season.
Gathering for a Good "Cause"
On this note, we would also like to salute the great work of our many friends in the nonprofit community, as we joined with them at our 13th annual You are 'Cause for Celebration event at CV Rich Mansion. We hope you join us in recognizing their contributions, particularly at this time of year, as they lend a helping hand to bring joy to so many who need it, during the holidays and throughout the year.

Special Holiday Recipes from Joe Sasso, Executive Chef N.Y. Hospitality Group/Caperberry Events
Mini Smoked-Salmon Croque-Monsieur
 
Ingredients:
  • 1 stick unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 10 ounces thinly sliced smoked salmon, coarsely chopped
  • 1 1/2 cups shredded Gruyere cheese (6 oz.)
  • 1 cup minced chives
  • 1/2 teaspoon freshly grated nutmeg
  • Salt and freshly ground pepper
  • 40 slices of cocktail rye bread
  • 40 slices of cocktail pumpernickel bread
  • 6 large eggs
 
How to Make:
  • In a medium saucepan, melt 3 tablespoons of the butter.
  • Stir in the flour until completely blended, then cook over moderately high heat, stirring constantly, until the roux is golden brown, about 3 minutes.
  • Gradually whisk in the milk until smooth. Bring the sauce to a boil, whisking constantly.
  • Reduce heat to moderately low and simmer, whisking often, until no floury taste remains, about 5 minutes.
  • Remove the saucepan from the heat and let the sauce cool, stirring, until very warm.
  • Stir in the smoked salmon, Gruyere, chives and nutmeg. Season with salt and pepper and let the sauce cool completely.
  • Spread half of the rye slices with a rounded tablespoon of the salmon mixture and close the sandwiches. Repeat with the pumpernickel slices and the remaining salmon mixture.
  • Preheat the oven to 400 degrees.
  • In a large, shallow bowl, beat the eggs thoroughly.
  • Stack 2 or 3 large rimmed baking sheets on one side of the stove.
  • In a large skillet, melt 1 tablespoon of the butter over moderate heat.
  • Dip 8 of the sandwiches in the beaten eggs to coat completely; cook the egg-dipped sandwiches over moderately high heat, turning once, until browned, about 1 minute per side.
  • Transfer the sandwiches to one of the baking sheets, leaving a little space between each one.
  • Repeat with the remaining sandwiches and beaten eggs, using 1 tablespoon of butter per batch.
Reheat the sandwiches for about 8 minutes, until piping hot. Cut the sandwiches in half on the diagonal, skewer with small wooden forks and serve hot.
Sparkling Pear-Prosecco Punch
 
Ingredients:  
  • 2 c. pear nectar
  • 1 c. cranberry juice
  • 3 c. prosecco or sparkling wine
  • sliced pears, for garnish
How to Make:
  • Combine pear nectar and cranberry juice in a punch bowl. Top with prosecco or sparkling wine.
Garnish with sliced pears and serve chilled. 
Caperberry Events Holiday Eggnog Shooters
 
Ingredients:
  • 4 cups of Organic Milk
  • 12 Large Organic Eggs
  • 1 Cup chilled Organic Heavy Cream
  • Grated Nutmeg
  • ½ Bubba's Caramel Bourbon
  • Sugar Cinnamon mixture
  • Vanilla Water (1/2 cup water, 3 tsp of vanilla extract)
How to Make:
  • In medium saucepan, whisk milk and sugar over medium heat until sugar is dissolved, 1 to 2 minutes. In a large bowl, whisk egg yolks. Whisking constantly, pour hot mixture into yolks in a slow and steady stream.
  • Return mixture to pan; cook over medium-low heat, stirring often, until thick enough to coat back of spoon, 20 to 25 minutes; do not let simmer. Quickly strain into a bowl. Stir in bourbon and cream. Cool completely; cover with plastic wrap; refrigerate until chilled.
Take glass, tamp rim into the vanilla water, then dip rim into the cinnamon sugar. Pour in the eggnog and garnish with nutmeg.
