Holiday Greetings From HRG
Well, we just checked our calendars and realized that 2017 is about to come to a close. It has been a great year for Hospitality Resource Group, as we have enjoyed working with our strategic partners to serve clients and grow all three of our businesses - event management, customized training, and marketing.
 
This year, we expanded our roster of clients across a range of industries and organizations, developing partnerships with small businesses, nonprofits and corporations, including New York Medical College, Avalon Bay, Arc of Westchester, Volunteer NY!, and the Westchester Community Foundation to name a few. 
 


Beyond our own success, we were honored to support our nonprofit community, and hope you join us in saluting their contributions, particularly at this time of year.  Nothing is more important than the people who volunteer to lend a helping hand to bring joy to so many who live among us, during the holidays and throughout the year.
 
And as we gather with our family and friends to celebrate the holiday season, all of us here at HRG wish you and those you care most about - all the best for a peaceful and joyous holiday season!

Special Holiday Recipes from Joe Sasso, Executive Chef, 
N.Y. Hospitality Group/Caperberry Events
Prosciutto-Wrapped Butternut Squash
 
Ingredients:
  • (16) 3 1/2-by-3/4-inch wedges peeled butternut squash (from 1 medium squash)
  • 1 tablespoon extra-virgin olive oil1 tablespoon pure maple syrup or honey or agave
  • Kosher salt and freshly ground pepper
  • 8 slices prosciutto, halved (about 1/2 pound)
  • Aged balsamic vinegar or balsamic glaze for drizzling
  • Fresh basil, for topping
How to Make:   
  • Position a rack in the top third of the oven and preheat to 425 degrees F.
  • Toss the squash with the olive oil, maple syrup, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Roast until the squash is almost tender, about 15 minutes. Flip the squash and continue cooking until the squash is browned and tender, 7 to 14 more minutes.
  • Remove and layout prosciutto place a squash wedge and add sprinkle basil inside then wrap around each squash wedge and arrange on a platter.
  • Drizzle the butternut squash with balsamic vinegar glaze and top with additional basil chiffonade.
  • Serve warm or at room temperature.
Caperberry Events Holiday Eggnog Shooters
 
Ingredients:  
  • 4 cups of Organic Milk
  • 12 Large Organic Eggs
  • 1 Cup chilled Organic Heavy Cream
  • Grated Nutmeg
  • Bubba's Caramel Bourbon
  • Sugar Cinnamon mixture
  • Vanilla Water (1/2 cup water, 3 tsp of vanilla extract)
How to Make: 
  • In medium saucepan, whisk milk and sugar over medium heat until sugar is dissolved, 1 to 2 minutes. In a large bowl, whisk egg yolks. Whisking constantly, pour hot mixture into yolks in a slow and steady stream.
  • Return mixture to pan; cook over medium-low heat, stirring often, until thick enough to coat back of spoon, 20 to 25 minutes; do not let simmer. Quickly strain into a bowl. Stir in bourbon and cream. Cool completely; cover with plastic wrap; refrigerate until chilled.
  • Take glass, tamp rim into the vanilla water, then dip rim into the cinnamon sugar.  Pour in the eggnog and garnish with nutmeg.
